Recipe for Beetroot Salad

2 servings, 5 minutes

Ingredients:

Dressing :

  • 1 tbsp pumpkin seed oil
  • 2 tbsp Balsamic Vinegar Rosso
  • 2 tbsp agave syrup or maple syrup
  • 1 tsp mustard
  • 1-2 pinches of salt
  • A little freshly ground pepper
  • 1 small onion, peeled and finely diced

Beetroot salad :

  • 500g cooked beetroot (sliced)
  • 1 pear, cut into wedges
  • 1 tbsp roasted pumpkin seeds
  • 2 tbsp roasted walnut kernels
  • 100 g feta (vegan option: tofu)
  • 50-100 g red cabbage microgreens

Preparation :

  1. Mix the dressing ingredients together and pour over the beetroot.
  2. Garnish with feta (or tofu for a vegan alternative), walnuts, and pear. Garnish with red cabbage microgreens.
