Hello foodies and cooking enthusiasts! Today I want to share a delicious and healthy recipe with you that you absolutely must try: Microgreen Pesto Pasta! This fresh and tasty meal is not only easy to prepare, but also packed with nutritious ingredients. The microgreens give the pesto a wonderfully fresh flavor and provide an extra dose of vitamins and minerals. So grab your ingredients and let's get started!
For the pesto you need:
- 3 cups of ingarden arugula microgreens (1 cup is equivalent to 1 fully grown ingarden pad)
- 2 cloves of garlic
- Juice of 1/2 lemon
- 1/2 cup nuts of your choice (pine nuts, walnuts, macadamia nuts, pistachios, etc.), roughly chopped
- 1/3 cup freshly grated Parmesan cheese
- 2/3 cup extra virgin olive oil (for a thinner pesto, you can add more)
- A pinch of salt and freshly ground black pepper, to taste.
Step one: Put garlic, salt, and pepper in a blender. Blend until a paste forms. Add nuts and repeat the process. Finally, add the Parmesan and blend again.
Step two: Add the lemon juice, 1/3 cup olive oil, and half of the microgreens. Blend until a sauce forms. Add the remaining olive oil and microgreens and blend until the pesto reaches your desired consistency. If the pesto is too thick for your liking, you can add more olive oil to thin it.
Caution: Do not mix the pesto for too long or blend it on the highest setting, otherwise the microgreens will be crushed and an undesirable taste will result!
