Dressing :

- 2 tbsp agave syrup or maple syrup
- 1 tsp mustard
- 1-2 pinches of salt

- 1 small onion, peeled and finely diced
Beetroot salad :
- 500g cooked beetroot (sliced)
- 1 pear, cut into wedges
- 1 tbsp roasted pumpkin seeds
- 2 tbsp roasted walnut kernels
- 100 g feta (vegan option: tofu)
- 50-100 g red cabbage microgreens
