Today I'd like to share a simple yet incredibly delicious recipe for vegetarian organic wraps. These wraps are not only healthy and packed with nutritious ingredients, but also easy to prepare and perfect for a quick meal or a snack on the go. I always keep a pack of tortilla wraps and various vegetables in my fridge so I can whip up these delicious wraps in just a few minutes. So let's get started and enjoy these wonderfully flavorful wraps!
For the wrap filling you will need:
- 1 tsp avocado oil
- ½ onion, diced
- 2 cloves of garlic, diced
- 2 carrots, diced
- 1 red bell pepper, diced
- 1 tsp caraway seeds
- ½ tsp paprika
- ½ tsp salt
- ½ tsp dried oregano
- ¼ tsp ground black pepper
- 1 can of kidney beans, discard the liquid
- 1 can of sweetcorn, discard the liquid
- 1 can of tomatoes, discard the liquid.
- 1 cup vegetable broth
For the wraps you will need:
- a handful of your favorite microgreens
- 2-4 wraps of your choice (I used 100% whole wheat wraps, but you can use any other wrap of your choice)
- ½ – 1 avocado
- Juice of ½ lime (~1 tbsp)

Heat the avocado oil in a medium-sized pan over medium heat. Once the oil is hot, add the onions and sauté for about 5 minutes, until softened. Add the garlic and sauté for another 3 minutes.

Add the carrots and spices to the pan, stirring frequently to prevent burning. Add the bell peppers and cook for 5 minutes, then for another 3 minutes until softened.

Add kidney beans, corn, and canned tomatoes to the pan.

Turn the stove temperature down to the lowest setting and let the mixture simmer for another 10 minutes.
- Arrange the wraps with the warm filling, a few slices of avocado, a large handful of microgreens, and a squeeze of lime juice. Enjoy!
