Hello fellow foodies and health-conscious readers! Today I want to share one of my absolute favorite recipes with you: the butternut squash bowl. This bowl is not only delicious but also packed with healthy ingredients. Butternut squash is rich in vitamins A and C, while brown rice is a good source of fiber. Along with a few other tasty ingredients, you get a bowl that not only satisfies your hunger but also delights your senses. So, grab a bowl and let's cook together!
This recipe requires a little more preparation time, but it's a true powerhouse of macro- and micronutrients. Here are three steps to create a wonderful rice and pumpkin bowl.
Ingredients:
- 1 medium-sized butternut or Hokkaido pumpkin
- 1 cup (whole grain) rice
- lettuce
- ½ avocado
Dressing:
- 2 handfuls of radish superfoods
- ½ handful of walnuts
- ½ handful of raisins
- 4 tsp cold-pressed olive oil
- 2 tsp lemon juice
- A little salt and pepper
Preparation:
- Start with the brown rice, as it takes the longest to cook. Rinse the brown rice under cold water and place it in a saucepan with salt and 2 cups of water. Once the water boils, reduce the heat to low and cover the pan. Simmer the rice for 30 minutes, or until completely tender.
- Next, you can prepare the butternut or Hokkaido pumpkin (note: the Hokkaido pumpkin doesn't need to be peeled). Cut the pumpkin into bite-sized pieces, season only with salt and pepper, and roast in the oven at about 200°C for approximately 25 minutes.
- Finally, put all the dressing ingredients into a blender and blend to your desired consistency, from chunky to very fine. Now, combine the salad, pumpkin, rice, and dressing in a salad bowl. Garnish your pumpkin and rice bowl with half an avocado.
