Lentil salad with microgreens recipe

A refreshing lentil salad that can be prepared quickly and easily!

Everyone knows the classic lentil salad . It comes in many different variations because it's quick and easy to prepare and can be adapted to your liking. Lentils contain a range of vitamins, fiber, iron, and up to 30% protein, which is what makes lentil salad so healthy. It's also particularly suitable for vegetarians and vegans looking to supplement their natural protein and iron intake.

Lentil salad recipe

4 servings, 20 minutes

Ingredients

Lettuce:

  • 180g lentils
  • 1 large tomato, diced
  • 1 large cucumber, chopped
  • 1 small bunch of parsley
  • 60g coriander
  • 1 orange, chopped
  • 1 onion, chopped
  • A handful of black olives
  • 1 seed pad of kale micogreens

Dressing:

  • 3 tablespoons of tahini
  • 1 tablespoon of honey
  • 1 tablespoon of vinegar
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • 1 teaspoon of salt
  • ½ teaspoon pepper
  • 1 teaspoon cumin
  • 1 teaspoon of za'atar (or oregano)

preparation

  1. Cook the lentils in boiling water for 15-20 minutes. Drain and set aside to cool.
  2. Mix all the salad ingredients together in a large bowl.
  3. In a small bowl, whisk together the dressing ingredients until a uniform consistency is achieved.
  4. Before serving, drizzle the dressing over the salad and toss until well mixed.
