Lentil salad recipe

Ingredients
Lettuce:
- 180g lentils
- 1 large tomato, diced
- 1 large cucumber, chopped
- 1 small bunch of parsley
- 60g coriander
- 1 orange, chopped
- 1 onion, chopped
- A handful of black olives
- 1 seed pad of kale micogreens
Dressing:
- 3 tablespoons of tahini
- 1 tablespoon of honey
- 1 tablespoon of vinegar
- 1 tablespoon olive oil
- 1 lemon, juiced
- 1 teaspoon of salt
- ½ teaspoon pepper
- 1 teaspoon cumin
- 1 teaspoon of za'atar (or oregano)
preparation
- Cook the lentils in boiling water for 15-20 minutes. Drain and set aside to cool.
- Mix all the salad ingredients together in a large bowl.
- In a small bowl, whisk together the dressing ingredients until a uniform consistency is achieved.
- Before serving, drizzle the dressing over the salad and toss until well mixed.
