Salad :

  • 1 large head of romaine lettuce (chopped)
  • 1 large, meaty tomato (diced)
  • 2-3 cucumbers (quartered)
  • 1/2 large green bell pepper
  • 5 radishes (diced)
  • 2 spring onions (sliced)
  • 1/4 cup freshly chopped parsley
  • 1 tray of radish microgreens

Dressing :

  • 3 tablespoons olive oil
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic (pressed or grated)
  • 1 teaspoon of sumac (can be replaced with za'atar)
  • 1 teaspoon of pomegranate molasses (alternatively balsamic vinegar)
  • 1/2 teaspoon dried mint
  • 1/2 teaspoon salt
  • freshly ground black pepper

Fried pita bread :

  • 1 large, double-folded pitta bread (cut into pieces)
  • 3 tablespoons olive oil
  • salt and pepper

Preparation :

  1. Dressing : Combine lemon juice, garlic, sumac, pomegranate molasses, dried mint, salt, and pepper. Stir the mixture well. Slowly pour in the olive oil, stirring continuously until well combined. Set the mixture aside.
  2. To fry the pita bread : Heat olive oil in a large skillet over medium heat. Place the pita bread in the skillet and season with salt and pepper. Cook, stirring regularly, until the pita bread is crispy and golden brown, about 5 to 7 minutes. Set the fried pita bread aside.
  3. Arrange the salad in a spacious serving bowl, adding the romaine lettuce, tomatoes, cucumbers, green peppers, radishes, spring onions, parsley, and radish microgreens. Drizzle the dressing over the salad and toss gently to combine the flavors.
  4. Add the fried pita bread to the salad just before serving.
