Carrot and quinoa salad: Crunchy carrots and protein-rich quinoa in a perfect combination

In this recipe, roasted carrots and quinoa combine to create a delicious and nutritious salad. The sweet and earthy flavors of the roasted carrots perfectly contrast with the light and grainy texture of the quinoa. 20 minutes, for 1 serving

Ingredients :

  • 1/2 cup carrots
  • 1 tablespoon of honey
  • 1 avocado
  • 1 onion, sliced
  • 2 cups mixed leafy greens
  • 1/2 cup quinoa
  • 1/4 cup crushed cashew nuts
  • A whole seed pad of radish microgreens

Balsamic vinaigrette

  • 2 tbsp olive oil
  • 2 tbsp dark balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp medium-hot mustard
  • salt and pepper

    Preparation :

    1. Glaze the carrots with honey and roast them in the oven at 350°C for 20 minutes.
    2. While the carrots are roasting, prepare the quinoa according to the package instructions. Finely chop the onion, avocado, and cashews.
    3. Remove the carrots from the oven and let them cool.
    4. To prepare the dressing: Whisk together olive oil, balsamic vinegar, honey, and mustard. Season with salt and pepper. The dressing will keep in the refrigerator for up to 7 days.
    5. Mix the ingredients in a large bowl and add the dressing, then mix and enjoy!
