Welcome to my latest blog post, where I'd like to introduce you to a simple yet delicious dish – broccoli pasta salad. This meal is not only quick and easy to prepare, but also packed with healthy nutrients and flavor. The combination of tender broccoli, fresh tomatoes, tangy Parmesan, and aromatic pasta creates a perfect balance of textures and tastes. This dish is suitable both as a light meal on hot days and as a side dish for a larger dinner. Let's dive into the Ingarden kitchen together and prepare this tasty broccoli pasta salad.

Ingredients
for the salad:
- 75g fusilli pasta
- 1/2 cup broccoli florets
- 1/4 cup diced tomatoes
- 1/4 cup cucumber, chopped
- 1/4 cup red onion, chopped
- 1/8 cup black olives
- a whole seed pad of red cabbage microgreens
for the dressing:
- 1/2 cup regular Greek yogurt
- 2 cloves of garlic, chopped
- 3-4 tablespoons of lemon juice
- 3 tablespoons olive oil
- salt and pepper
Preparation:
- Cook the fusilli pasta according to the package instructions. Let it cool on its side.
- Cut the broccoli into florets and remove the stem. Add the chopped broccoli, tomatoes, cucumber, onion, black olives, and red cabbage microgreens.
- Mix all the dressing ingredients in a small bowl.
- Drizzle over the salad just before serving and enjoy!
