Carrot and quinoa salad: Crunchy carrots and protein-rich quinoa in a perfect combination

Ingredients :
- 1/2 cup carrots
- 1 tablespoon of honey
- 1 avocado
- 1 onion, sliced
- 2 cups mixed leafy greens
- 1/2 cup quinoa
- 1/4 cup crushed cashew nuts
- A whole seed pad of radish microgreens
Balsamic vinaigrette
- 2 tbsp olive oil
- 2 tbsp dark balsamic vinegar
- 1 tbsp honey
- 1 tbsp medium-hot mustard
- salt and pepper
Preparation :
- Glaze the carrots with honey and roast them in the oven at 350°C for 20 minutes.
- While the carrots are roasting, prepare the quinoa according to the package instructions. Finely chop the onion, avocado, and cashews.
- Remove the carrots from the oven and let them cool.
- To prepare the dressing: Whisk together olive oil, balsamic vinegar, honey, and mustard. Season with salt and pepper. The dressing will keep in the refrigerator for up to 7 days.
- Mix the ingredients in a large bowl and add the dressing, then mix and enjoy!
