Here is our secret twist on classic tomato sauce.

There are days when we crave a quick and easy meal that's still packed with flavor and aroma. This roasted red pepper pasta salad is just the thing! This simple and delicious pasta dish is made with roasted red peppers, tomatoes, onions, and garlic, and finished with a tomatoey salsa. Bold mustard microgreens and Parmesan cheese provide the perfect finishing touch. A perfect lunch or dinner that can be on the table in just 25 minutes!

25 minutes, for 2 servings

Ingredients :

  • 100g spaghetti or linguine (pasta)
  • 2 red bell peppers
  • 1 tomato
  • 2 cloves of garlic
  • 1 red onion
  • 1 teaspoon tomato salsa
  • 1 Seed Pad Mustard Microgreens

Preparation :

  1. Cut the tomatoes, onions, and bell peppers into equally sized pieces. Add the garlic cloves and season everything with olive oil, salt, and pepper.
  2. Roast the vegetables in the oven at 180°C for 20 minutes. Put the cooked vegetables and the tomato salsa into a blender and blend until smooth.
  3. Cook the pasta according to the package instructions. Add the roasted peppers and tomato salsa to the pasta and cook for another 5 minutes.
  4. Serve with mustard, microgreens and Parmesan cheese!
