Ingredients:
- 1 can of chickpeas
- 2 tablespoons of tahini
- 1 red onion, chopped
- ½ can of corn kernels
- 2 lemons, juiced
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 tablespoon vegan mayonnaise
- A whole pad of Ingarden mustard microgreens
Preparation :
- Rinse the chickpeas and place them in a large bowl. Add two tablespoons of tahini and blend well.
- Add the red onion, corn, and mustard seeds. Mix well.
Season with vegan mayonnaise, lemon juice, garlic powder, olive oil, salt and pepper. - Serve in a salad wrap or on your favorite toast!
