4-6 servings, 30 minutes
Ingredients
- 1kg sweet potatoes (about 3 large sweet potatoes)
- 3 tablespoons extra virgin olive oil
- 1 1/2 teaspoons of salt
- Half a pad of radish microgreens
- 1 to 2 tablespoons of spice or spice combination of your choice: chipotle powder, smoked paprika, Chinese five-spice, pumpkin pie spice, garam masala, Cajun spice, etc.
preparation

Preheat the oven:
For a crispier texture, set the oven to 250°C. Otherwise, preheat it to 230°F. Place a frying pan or a sturdy baking sheet that can withstand high heat in the oven to preheat. -
Prepare the sweet potatoes:
Peel the sweet potatoes and trim the ends. Halve each potato lengthwise, and if it's particularly long, also cut it crosswise. Cut these pieces into wedges 1 to 1.5 cm thick. Alternatively, you can slice the potatoes using a mandoline or a sharp knife. -
Season the sweet potatoes:
Place the sweet potatoes in a large bowl. Drizzle with oil and toss well to coat evenly. Sprinkle with salt and your favorite spices. Mix thoroughly with your hands to ensure each piece is well coated. -
Arrange the sweet potatoes on the preheated baking sheet:
Carefully remove the hot baking sheet from the oven. Arrange the seasoned sweet potatoes in a single, even layer on it. Be careful – the sheet is very hot! -
Bake the sweet potatoes:
Bake the sweet potatoes for 15 to 25 minutes, depending on oven temperature and the size of the pieces. After 10 minutes, remove the baking sheet from the oven and turn the pieces over with tongs. Return the baking sheet to the oven and bake for another 5 to 15 minutes, until the sweet potatoes are nicely browned. For extra crispiness, let them get a little darker—but be careful not to burn them. -
Let cool and serve:
Let the sweet potato fries cool for 5 minutes before serving. The caramelized natural sugar enhances their flavor, even if they appear quite dark.
