Ingredients
- half a head of broccoli
- 2 onions
- 1 clove of garlic
- 500 ml vegetable broth
- a handful of broccoli microgreens
- 100g feta cheese (or 100g crumbled tofu as a vegan alternative)
- 250 g beans
- a squeeze of lemon juice
- Chili powder
For garnishing
- a handful of sunflower seeds
- Broccoli microgreens
preparation
- Preheat the oven to 220°C (425°F) and place a baking sheet in the oven so that it also heats up. Put the broccoli, two onions, a clove of garlic, oil, and salt in a bowl and mix all the ingredients together. Then spread the mixture on the hot baking sheet and bake for 7 minutes. After 7 minutes, turn the broccoli with a spoon so that all sides are browned. After another 7 minutes, remove the broccoli from the oven.
- Now, put 500 ml of broth, the roasted vegetables, a handful of microgreens, 100 g of feta cheese, 250 g of beans, lemon juice, and chili powder into a blender and blend until smooth and creamy. Heat the soup in a pot and add more broth or water as needed.
- Finally, garnish the soup with more microgreens, feta cheese and sunflower seeds, as well as a drizzle of olive oil, and serve.
