This hearty and delicious oriental lentil soup is perfect as a quick lunch or dinner, as it's quick to prepare. Larger batches can also be cooked in advance and frozen, so you always have a tasty and healthy meal on hand. The addition of our slightly spicy mustard microgreens gives the flavorful soup extra nutrients like folate, vitamin K, and manganese.
Tip: We recommend serving the soup with crispy baked flatbread. It perfectly complements the dish and satisfies your hunger!
Recipe for Oriental Lentil Soup
4 servings, 25 minutes
Ingredients :
- 3 small onions (peeled and diced)
- 2 cloves of garlic (peeled and diced)
- 3 tablespoons olive oil
- 300g red lentils
- 100 ml passata (strained tomatoes)
- 1.2 - 1.3 liters of vegetable broth
- 1 tsp smoked paprika powder
- 1 tsp curry powder
- 1 tsp cumin
- 1 tsp marjoram
- 1.5 tsp salt
- 0.5 tsp pepper
- 0.5 tsp cinnamon
- 1 chili
- 2 tbsp agave syrup
- 1 handful of organic mustard microgreens
- 2 tbsp pumpkin seeds
- 1 tbsp flaxseed
Preparation:
- Place a pot on the stove and add olive oil, onions and garlic over medium heat, sautéing until translucent.
- Add the spices and lentils. Briefly sauté everything to allow the flavors to develop.
- Finally, add the agave syrup and immediately deglaze with the broth and tomatoes.
- Simmer for about 15 minutes over medium heat.
- Puree the soup until smooth, serve and enjoy!
