12 pancakes, 30 minutes
Ingredients
- 1 1/2 cups oat flour
- 2 tablespoons of honey
- 3 tablespoons baking powder
- 3 tablespoons of vegetable oil
- a pinch of salt
- 1 cup of milk
- 1 cup of spinach, finely chopped
- 1 whole seed pad of broccoli microgreens
- ½ teaspoon vanilla extract
preparation
- Place flour, baking powder, and salt in a mixing bowl and stir until well combined. Add milk, honey, vegetable oil, vanilla extract, spinach, and microgreens, and mix with an electric mixer until the batter is smooth and lump-free.
- Heat a pan over medium heat and grease it with a little oil. Pour in about 1/4 cup of batter to form a pancake.
- Bake for about 2-3 minutes, until each pancake develops a few bubbles. Then turn it over and bake for another 2 minutes.
- Transfer the pancakes to a plate using a spatula. Serve with maple syrup and a little more microgreens.
