Recipe for Cucumber-Cashew Microgreen Dip
1 serving, 15 minutes
Ingredients
- 1 1/4 cups soaked cashew nuts
- 1/2 cup water
- 1/2 teaspoon salt
- 1 pinch of pepper
- 1/2 lemon, juiced
- 2 tablespoons nutritional yeast
- 2 tablespoons soy sauce
- 1/2 cucumber
- A handful of microgreens of your choice (we used broccoli and red cabbage)
preparation
- Soak the cashew nuts overnight.
- Drain the water from the nuts.
- Grate the cucumber into fine pieces.
- Place all ingredients except the microgreens into a blender and blend until creamy.
- Stir microgreens into the dip and enjoy with your favorite vegetables or chips!
