Delicious quinoa pizza bites - the perfect party snack!

Ingredients :
- 1 cup multicolored quinoa
- 1 diced tomato
- 1 egg
- ½ cup mozzarella cheese
- 2 whole pads of Ingarden mustard microgreens, chopped
- 2 tablespoons of tomato paste
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Preparation :
- Preheat the oven to 200°C and grease a 12-cup muffin tin or line it with muffin cups. Cook the quinoa according to the package instructions and set aside.
- In a large mixing bowl, combine quinoa, diced tomatoes, chopped microgreens, egg, mozzarella, tomato paste, olive oil, garlic powder, salt, and pepper, and mix well. Pour the mixture into the muffin tin and bake in the oven for 12-15 minutes.
- Top the quinoa bites with a little more mozzarella cheese and bake for another 3 minutes, or until the cheese is golden brown. Serve with a little more microgreens and marinara sauce, and enjoy!
