Ingredients

  • 1 cup coconut milk
  • 1 cup coconut cream
  • 2 lemons, freshly squeezed
  • Fresh mint
  • 2 tablespoons of honey
  • a whole seed pad of arugula microgreens

    preparation 

    1. Put coconut milk, coconut cream, lemon, mint, honey and microgreens into a blender and blend until the mixture is smooth and creamy.
    2. Transfer to a bowl and freeze for 3-4 hours.
    3. Serve with your desired toppings!
