Ingredients:
- 6 large eggs
- A pinch of cinnamon or vanilla extract
- 2 tbsp chopped onion
- handful of diced tomatoes
- handful of fresh spinach leaves
- 2 whole sprouting pads from ingarden ( kale & radish )
- Salt and pepper, to taste
Preparation :
- Preheat oven to 200 °C (top and bottom heat).
- Whisk the eggs in a large bowl until evenly beaten. Add a pinch of cinnamon or vanilla extract.
- Add the chopped spinach leaves, tomatoes, onions, and the sprouting pads from ingarden. Season with salt and pepper.
- Divide the mixture among the muffin cups and bake for about 15 minutes. Enjoy!
