Fried Halloumi and Pomegranate Pitta Recipe
1 serving, 10 minutes
Ingredients
- 1 loaf of flatbread
- 1 block of halloumi cheese
- a handful of pomegranate seeds
- a handful of fresh arugula
- 1 tomato, sliced
- ½ cup Greek yogurt
- 1 lemon
- salt and pepper
- 2 tbsp olive oil
- a whole clove of garlic
- 2 tsp honey
- 1 seed pad of our rocket microgreens
preparation
- To make the yogurt spread, first peel a whole garlic clove and cut off the top part of the clove. Drizzle with olive oil, season with salt and pepper. Place in a baking sheet and bake in the oven for 30 minutes.
- Remove the roasted garlic cloves from their skins and mix with the yogurt, 1 teaspoon of olive oil and honey, then let it cool in the refrigerator.
- Marinate the arugula microgreens in olive oil, lemon juice, salt and pepper.
- Cut the halloumi cheese into equally sized slices. Mix the remaining olive oil, honey, salt, and pepper in a small bowl. Marinate the halloumi slices by dipping them in the mixture and then frying them directly in the pan until golden brown on both sides.
- Cut the flatbread horizontally in half. Spread the sandwich with the yogurt spread. Add the marinated microgreens, the fried halloumi, the fresh arugula, the sliced tomatoes, and the pomegranate.
- Drizzle with balsamic glaze and enjoy!
