Smashed potatoes, also known as crushed potatoes or mashed potatoes, are a popular classic from the USA. Quick and easy to prepare, smashed potatoes are perfect as a side dish or snack. This classic potato recipe gets a modern twist. With the addition of our microgreens and a fresh dip, these smashed potatoes are not only incredibly delicious but also far more nutritious!
Recipe for Smashed Potatoes with Microgreen Dip:
1 serving, 45 minutes
Ingredients
- 250 g potatoes
- 5 g olive oil
- Salt
- 250g low-fat quark
- A handful of fresh microgreens (in our case: radishes & broccoli)
preparation
- Boil the potatoes and then flatten them with a glass. Then brush them with olive oil and sprinkle with salt.
- Place in the oven for another 30 minutes at 200 degrees with convection.
- Meanwhile, stir the low-fat quark with a splash of water until creamy. Add salt and half of the microgreens.
- Mix well and refrigerate.
- Distribute the remaining microgreens over the finished smashed potatoes and enjoy!
