Hello fellow foodies and soup lovers! Today I want to share a wonderful soup recipe with you that will really warm you up on cold days: Bell pepper soup with organic red cabbage microgreens! This delicious soup is not only easy to prepare, but also packed with fresh and healthy ingredients. The unique combination of organic red cabbage microgreens makes our bell pepper soup a true taste sensation. So grab your pots and pans and let's whip up this delicious soup together!

For the soup you will need:

  • 1.5 yellow bell peppers
  • 300 ml vegetable stock
  • 1 tbsp coconut oil
  • 2 tbsp red cabbage microgreens
  • 3 tbsp cashew nuts
  • 1 tsp turmeric
  • pepper
  • Salt

Preparation:

  1. First, the bell peppers are quartered, deseeded and washed.
  2. Then it is placed in a high-performance blender with the remaining ingredients.
  3. To ensure the soup is warm but not too hot, simply run the blender at maximum speed for 2-3 minutes.
  4. Finally, the bell pepper soup is seasoned with salt and pepper and, of course, finished with red cabbage microgreens.
