Ingredients
- ½ cucumber
- ½ zucchini
- 5 cups baby spinach
- ½ organic lime slice
- ½ clove of garlic
- ½ avocado
- salt and pepper
- a handful of arugula microgreens
preparation
- Wash the cucumber and zucchini and cut them into vegetable noodles using a spiralizer.
- Wash the baby spinach and remove the pit and peel the avocado.
- Place spinach, lime, garlic clove, avocado, and microgreens in a blender and blend into a creamy dressing. Season with salt and pepper.
