Tuna Sandwich Recipe

- 1 can of chickpeas (approx. 240g drained)
- 1 can of tuna (approx. 150g drained)
- 3-4 tablespoons of mayonnaise or Greek yogurt
- 1 tablespoon of lemon juice (freshly squeezed)
- Bread of your choice
- 1 handful of arugula microgreens

Prepare the chickpeas : Drain and rinse the canned chickpeas. Place the chickpeas in a medium bowl and roughly mash them with a fork or potato masher until they are chunky but not too fine.

Prepare the tuna : Drain the can of tuna and add it to the bowl with the crushed chickpeas. Flake the tuna with a fork and mix it with the chickpeas.
