Most of the vitamins, antioxidants, and phytochemicals are actually found in the small leaves of microgreens. This is where most of the photosynthesis takes place – the very process that provides the plant with energy and nutrients.
The tender stems also contain valuable fiber and moisture, but are somewhat less concentrated in comparison.
👉 Our tip: Simply cut your microgreens a few millimeters above the pad – this way everything stays fresh and clean, and you get the optimal plant parts.
