1 loaf (serves 6), 55 minutes



Ingredients:

  • 3 ripe bananas, peeled and mashed
  • 80 ml vegetable oil
  • 1 egg
  • ¼ teaspoon cinnamon
  • 80 ml Maple syrup
  • a pinch of salt
  • 1 tablespoon baking powder
  • 200g flour
  • two whole seed pads of kale microgreens

Preparation:

  1. Preheat the oven to 200°C. Grease and flour your bread baking pan.
  2. Mash the ripe bananas with a fork in a large mixing bowl. Pro tip: If you have unripe bananas and want to bake banana bread, put the bananas in an air fryer and bake them for 8 minutes at 180°C.
  3. Add the remaining ingredients to the bowl and process into a smooth dough. Make sure you use a food processor to chop your garden superfoods so that the consistency is maintained.
  4. Pour the batter into the prepared loaf pan and bake for 45 minutes at 200°C (390°F). To check if the banana bread is done, insert a toothpick into the loaf; if it comes out clean, it's ready. Let it cool completely before serving.
