These cucumber rolls are not only easy to prepare but also packed with flavor and nutrients. The addition of microgreens transforms this simple appetizer into a nutritious treat that's also a feast for the eyes. Recipe for cucumber rolls
2 servings, 10 minutes
Ingredients
- 1 large cucumber
- 1 large carrot
- 1 large red bell pepper
- ½ cup microgreens (we used broccoli)
- ½ cup cream cheese (or vegan alternative)
- sesame seeds
- ½ cup soy sauce
preparation
- Cut the cucumber into thin slices using a vegetable peeler. Once you reach the middle of the cucumber, turn it over and start peeling on the other side.
- Cut the bell pepper and carrot into thin strips.
- Place the cucumber slices side by side on a board and pat them dry with paper towels.
- Spread the cucumber slices with cream and arrange the chopped vegetables and microgreens on one side of the cucumber slices.
- Roll the cucumber slices tightly into a spiral from one side.
- Serve with sesame seeds and soy sauce.
